Blueberry Bread
This is an evolution of a recipe found in a popular cookbook, which we like and will gladly recommend if you ask. I've tried experimenting with adding cinnamon, lemon zest, etc. but this is a pretty good starting place.
Ingredients:
- 3 cups all purpose flour
- 3/4 cups sugar
- 1 tablespoon baking powder (not baking soda)
- 1/2 tsp salt
- 1/4 tsp baking soda (not baking powder)
- 1 egg, beaten
- 1 and 2/3 cup milk or water
- 1/4 cup cooking oil
- 1 cup blueberries
Equipment:
- Oven
- 9x5x3 loaf pan
- Large mixing bowl
- Medium mixing bowl
- Mixing spoon or spatula
Steps
- Oil up (or other grease/spray/edible lubricant) the 9x5x3 loaf pan.
- In the large mixing bowl, mix dry ingredients, and make a well.
- In medium mixing bowl, mix egg, milk/water, and cooking oil.
- Pour liquids from medium bowl into dry ingredients in large bowl, and stir until lumpy and moistened. Fold in blueberries.
- Bake at 350 for 60-75 min (when toothpick or chopstick comes out clean)
