Blueberry Bread

This is an evolution of a recipe found in a popular cookbook, which we like and will gladly recommend if you ask. I've tried experimenting with adding cinnamon, lemon zest, etc. but this is a pretty good starting place.

Ingredients:

  • 3 cups all purpose flour
  • 3/4 cups sugar
  • 1 tablespoon baking powder (not baking soda)
  • 1/2 tsp salt
  • 1/4 tsp baking soda (not baking powder)
  • 1 egg, beaten
  • 1 and 2/3 cup milk or water
  • 1/4 cup cooking oil
  • 1 cup blueberries

Equipment:

  • Oven
  • 9x5x3 loaf pan
  • Large mixing bowl
  • Medium mixing bowl
  • Mixing spoon or spatula

Steps

  1. Oil up (or other grease/spray/edible lubricant) the 9x5x3 loaf pan.
  2. In the large mixing bowl, mix dry ingredients, and make a well.
  3. In medium mixing bowl, mix egg, milk/water, and cooking oil.
  4. Pour liquids from medium bowl into dry ingredients in large bowl, and stir until lumpy and moistened. Fold in blueberries.
  5. Bake at 350 for 60-75 min (when toothpick or chopstick comes out clean)
