Do you like tacos or pulled chicken sandwiches? This is the probably the easiest way to make them, and it works for people with a lot of different diets and allergies.

Ingredients:

  • 1 pound of boneless, skinless chicken breast
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt

Equipment:

  • Pressure cooker
  • 2 forks

Steps

  1. Put ingredients in pressure cooker. Try to coat chicken on both sides with seasoning.
  2. Cook on meat or high setting for 45 minutes.
  3. Release pressure, remove chicken, and shred using two forks.
  4. Use this in tacos, burritos, over rice, in sandwiches, etc.
  5. Since chicken broth doesn't usually come in 1 cup increments, I measure it out and freeze it in 1 cup blocks. To use frozen broth, microwave for a minute when needed.

Alternative Modifications

  • Italian seasonings: Replace cumin with 1/2 tsp oregano and 1/2 tsp basil
  • The rest of the bird : Instead of chicken breast, start with whatever chicken pieces you have, wings, thighs, drumsticks etc. Bake at 350 degrees for 30 minutes. Remove as much of the skin as you feel like, coat in seasoning, and throw pieces and skin into the pot. Be careful when shredding to remove all the small bones. While this takes a little longer, the skin and bones add flavor, and this is a money saver as well.
